My passion for cooking started very early, in my mother’s kitchen…
Making my first cake all by myself, at just 7 year-old.
This curiosity for mixing ingredients together even brought me to study chemistry at university!
Growing up in France, I always loved the wonderful desserts, sweet treats and incredible chocolate you can find in almost any store or bakery.
We always had a cake, or even 3 at home, waiting to be indulged…
My mom even had her famous “3 course cake dinner”
Made of cake, cake and some cake for dessert.
As I grew older, I became more health conscious and turned vegan… I started missing a lot of the wonderful flavors I was used to eating. For years I felt split between my love for delicious sweets (that most of the time are not healthy), my choice to nourish and heal my body and a more ethical way of living. To lessen my impact on the environment, reduce harm to animals, but also to improve my health…
I still had the desire to bite into a crispy and crunchy pastry (that always contains gluten). Or find comfort in soft, warm, sweet & spongy cake! But it was far more important for me to avoid food that is known to be unhealthy. Like refined sugar, gluten, dairy and other highly processed ingredients…
As a woman, I also experienced hormonal challenges, and through my own research I became conscious of the fact that regular milk consumption might not be so good for me. Then I became pregnant with my daughter… and got another good reason to cut down on dairy products and eat clean.
So I decided to eat mostly plant-based food, which really felt great! But the truth was
far from perfect…
Even in my home-country, it was extremely challenging to find truly plant-based desserts.
Even more challenging when I started traveling… And the options I did find, just didn’t quite hit the spot!
So, with a heavy heart, I had to let go of a truly incredible world of flavors, smells and textures.
I tried to find substitutes and tested many recipes I found online for vegan desserts.
However, none of them brought me the sweet satisfaction I was looking for…
They just didn’t taste so good 🙁
I almost gave up… but still felt it was possible.
Deciding to continue the quest to create delicious desserts that just scream guilt-free decadence.
In the end my passion and lots of experimentation led me to discover that…
It took me many years to perfect my delicious dessert recipes…
In the end, I came up with many creative ways to whip up indulgent treats just as rich, and sweet as the original recipe…
My family just loved it,
and so did my friends.
Every time we were invited over to a house party or dinner, I got the same request:
Yep, my crafty plant-based desserts became the center of each party or gathering. Within minutes of bringing out a tray of my Energy Balls or Gluten-free brownies – they would be gone.
I mean completely gone. Just few crumbs on an empty tray.
And lots of smiling faces – about to say… Give Us More!
I mean… everyone looooves chocolate. But I knew I was on to something. Surprisingly, I could not expect what would happen next…
A boutique deli with homemade plant-based treats, including both chocolate, desserts & cheese.
Very soon, we became the most popular and well-known health café in the area, mostly thanks to our chocolate and to those creations my friends loved so much…
We started supplying restaurants and shops on a wholesale scale.
People kept on asking us how these sweets were made – so we started offering workshops.

As the requests grew in number, locally and from all over the world, I knew I had to create this online course to share this precious and rewarding knowledge.
